Food Truck Fun

One of the trends to hit the food world over the last few years is the popularity of food trucks. Social media channels are the perfect companions for these mobile kitchens because you can find out when they will be in your area.

I’ve seen many instagram photos of the Waffle Love truck that is well-loved here in Northern Utah (and one in Arizona) and I’ve been wanting to try it for myself. On a rainy afternoon last week, my daughter found out that we were going to be close to a Waffle Love stop so we decided to go for it.

I had “the works” - which means I paid $7 for a waffle from a truck. LOL! It was very moist, but crisp and it seemed almost like it was sprayed with a coating of sugar. It was topped with Biscoff spread, which is a naughty spread made from ground up cookies. (I’m not even joking) On top of that was a big old pile of fresh whipped cream and raspberries.

When I say that we like sugar in Utah, it is NOT an understatement. It’s not a good thing that I live in Utah because I L-O-V-E sweets. *Sigh* It was delicious and the experience itself was fun. We would definitely like to try more food trucks. I’ve put my daughter in charge of scouting them out for us and she is thrilled with this “assignment”.
